Butternut Squash Soup
1 medium butternut squash
1 small onion chopped
2 Tbls coconut oil
1 clove garlic crushed
1/4 tsp. salt
1/2 tsp. ground cardamom
4 cups of broth, chicken or vegetable
thumb size of ginger pealed and chopped
1/4 tsp. cinnamon
1/2 cup half and half (optional)
Pre-heat oven to 350 degrees. Slice butternut squash in halve length ways and place flat side down on an oiled baking tray. Bake for approx. 30 minutes or until soft when squeezed. While that is cooking, saute the onions and garlic in coconut oil until slightly transparent. Add the spices to the onion- garlic mix and continue cooking for a few more minutes to release the oils inside the herbs.
Once squash is cooked, allow it to cool for 10 minutes then scoop out flesh and place in a high power blender. Add the stock, onions, garlic and spices. Blend at high speed until smooth. Transfer the soup to a saucepan and gently heat and simmer for 5 minutes. Ready to serve. Half and half may be added at the table for extra creaminess. Compliment with a fresh tossed green salad and your choice of dressing.
