Chia Fruit Pudding
1/2 cup almond milk
2 small bananas or 1 large
1-2 Tbsp. Chia seeds ground
1/2 tsp. vanilla extract, pinch of cinnamon
Optional toppings, maple syrup, granola, blueberries, coconut shreds.
Soak chia seeds in almond milk until thickened (about 5 min.). Stir frequently to prevent clumping. Mash banana until smooth then stir in chia. Add toppings and serve.
