Eggplant Parmesan
Here is a simple and fast version of a much loved Italian dish. It's one of my regular meals.
1 medium eggplant
1 clove of garlic crushed
1/2 cup of parmesan cheese
1 cup marinara sauce
3 Tblsp. coconut oil
Wash the eggplant and cut into 1 inch thick slices. In a large frying pan, heat the coconut oil on a medium setting. Gently saute the garlic until lightly brown then remove the garlic and discard. Now that the oil is infused with garlic flavor, add the the eggplant in a single layer and saute until browned approximately 7 minutes, then flip and saute the other side until brown and softened.
Next spread a few tablespoons of the marinara sauce over the eggplant. Put a good amount on each slice but try not to let is spill over into the fry pan. Then sprinkle a few tablespoons of the parmesan on top of the sauce.
Reduce the heat, cover with a lid but allow an opening for the moisture to escape. Continue cooking approximately 5 minutes until the sauce is heated and the cheese is melted. Serve with your favorite pasta tossed with olive oil and garlic.
