Gazpacho
This is one of my favorite summer soups. All the ingredients are in season and at their peak. Best of all they are bountiful at your local farmer's market. And if you have a green thumb you may already be growing them yourself. This recipe is adapter from the Vegetarian Epicure.
Ingredients:
1 small onion chopped
1 large cucumber, peeled, seeded and sliced
1 small red bell pepper, seeded
1 jalapeno, seeded
4 medium tomatoes
1/3 cup olive oil
3 Tblsp. apple cider vinegar
2 cloves of crushed garlic
2 Tblsp. honey or agave
2 Tblsp. mayonnaise (optional)
Blend all ingredients, except mayonnaise in a Vitamix or high power blender until smooth and creamy. Add the mayonnaise, blend briefly until well incorporated. Pour into a serving bowl and chill for approx 1 hour. Give the soup a gentle stir and serve with your favorite crackers and nut spreads.
