Almond Milk
1 cup almonds (soaked at least 6 hours or overnight)
3 cups of good water
Optional 2 medjool dates
Optional 1 tsp. vanilla extract
Drain and rinse almonds, place in the blender with 2 cups of the water, blend at high speed approx 2 minutes. Add remaining water and dates or sweetener, blend another 30 seconds or so. Pour through a nut milk bag or fine mesh cloth to separate the pulp. Store in the refrigerator, use within 4 days.
