Sweet Meats (raw)
1/2 lbs. almonds
1/2 lbs. cashews
1 tsp. ground cardamom
1 1/2 Tblsp. agave nectar
1/2 tsp. sea salt
Using a food processor, grind down the nuts until powdery, then blend in the cardamom and salt. Transfer to a large bowl. Add the agave nectar and kneed together until all is well incorporated and sticking together.
Next, lay the mixture onto a sheet of wax paper, cover with a second sheet and smooth with hands or rolling pin to approximately 1/2 inch thickness. Cut into 2x2 inch squares, dust some pieces with cocoa powder (optional), top with a nut or piece of dried fruit.
